想對臺灣咖啡說的話:
在杯測師眼裡,一杯好的台灣咖啡,應該滿足杯測表上所有的品評項目。但是在尋豆師的眼裡,也在乎每一個咖啡農背後的故事,以及莊園理念。因為我們想透過臺灣咖啡,不只是風土的滋味,更是一起打造共同的價值觀。
這一年對台灣咖啡的看法:
越來越艱辛的氣候環境,讓咖啡樹面臨的挑戰越來越大:無論產量萎縮,或熱害對咖啡品質造成的影響。但總是可以找到人,為挑戰尋找解方。
勝樂咖啡莊園,在海拔不足六百公尺的台中新社,以果園為基礎,打造人工遮蔭的環境,搭配精緻田間管理,產出的果實,後製的風味,似乎都正在為台灣咖啡的未來之路上,鋪陳上一個可能的解決方案。

Scott is a pioneer of Taiwan's specialty coffee movement. Unbound by traditional frameworks and assumptions, he searches out every possible expression of terroir and innovation, forging a unique, contemporary identity for Taiwanese coffee.
To Taiwanese coffee, I want to say:
In a cupper's eyes, a good cup of Taiwanese coffee should satisfy every criterion on the cupping form. But in a bean sourcer's eyes, what matters just as much is the story behind each coffee farmer and the philosophy behind each estate. Because through Taiwanese coffee, we want to convey not just the taste of the land, but a shared set of values we're building together.
My thoughts on Taiwanese coffee this year:
As the climate grows increasingly harsh, coffee trees face ever-greater challenges — whether shrinking yields or the impact of heat stress on quality. But there are always people out there searching for solutions to these challenges. Chen Sheng Le Coffee Estate, located in Xinshe, Taichung, at an elevation of under 600 meters, has built its operation around an orchard base, creating an artificially shaded environment paired with meticulous field management. The fruit it produces, and the flavors that emerge through processing, seem to be laying out one possible path forward for the future of Taiwanese coffee.

位於台中新社的陳勝樂咖啡莊園,是一段將「對土地的愛」轉化為永續實踐的深刻故事。
原為葡萄園,因土地轉型而發展出獨特農法。莊園採用葡萄棚架、南瓜與咖啡樹共生的栽培模式,巧妙利用既有棚架架高咖啡枝條,解決低海拔缺乏遮蔭的問題,兼具生態效益與作業便利性。
面對低海拔種植的困境,莊園主並沒有選擇破壞地形,而是順應自然,這種不強求、共生互利的農法,讓莊園榮獲「台灣十大永續示範莊園」的肯定。

Estate Introduction:
Located in Xinshe, Taichung, Chen Sheng Le Coffee Estate tells a profound story of turning "love for the land" into sustainable practice.
Originally a vineyard, the land was transformed to develop a distinctive farming method. The estate adopts a cultivation model in which grape trellises, pumpkins, and coffee trees grow together in symbiosis — cleverly using the existing trellis structures to raise the coffee branches, solving the problem of insufficient shade at low elevation, while offering both ecological benefits and operational convenience.
Faced with the challenges of low-altitude cultivation, the estate owner chose not to reshape the terrain, but instead to work with nature. This non-forcing, mutually beneficial farming approach earned the estate recognition as one of "Taiwan's Top Ten Sustainable Model Estates."
